Some older models and commonly the MX or motocross models still use kick starts only and this may be a problem for beginner riders. And if you do fuck it up, parts are plentiful and dirt cheap. The community support (especially for the ninja 250) is fantastic. If she's tall enough to fit, the 250X is a great trail bike. The infamous valve cupping issue can be solved with 2008+ 250R valve springs, which provide more seat pressure on the valve than the original X springs did. Lots of people also have gone stainless kibblewhite intake valves, another option to the cupping issue.
Things like the Kawasaki KLX250S or Honda CRF250L (I like the KLX way more for off road). Maintenance will be way easier on a dual sport also. The down side is they are typically heavy and gutless. Although those aren't necassarily bad things as a beginner. You'll just get bored of it quickly once your skills set in.
